Plus One, 2011

Plus One is a social culinary installation in collaboration with Park Avenue Spring Executive Chef Keivn Lasko. Inspired by the social experience of dining out, Plus One links diners with absent friends, family, and acquaintances that are present in conversation though not physically in attendance. Upon ordering, all diners at the table begin the meal with beet-pickled egg with crème fraiche and caviar, accompanied by refreshing glass of rose water and beet spring tonic. An additional glass of tonic is also presented. Over the course of the meal, the modified spare glass acts as a timepiece, slowly draining liquid that gradually transforms the color of the eggshells beneath. The glass in Plus One stands in for the absent companions at the table while also measuring the passage of time.
